Enjoy Christmas (activities) no matter what (season it is)

Now that Christmas is over (far over!) I want to share with you all those great activities that we usually remember to do during the holidays but that are pleasant and heart warming all year round!

I was thinking in changing this site name to: Enjoy Christmas activities no matter what season it is… but that would be a long name so, let’s KISS (keep it simple & smart!).

Here we go!

One of the most pleasant moments during holiday is when I bake ginger cookies.

They are so appreciated by the family that I am usually gently asked (and threatened with isolation if I don’t agree) to make them again for the Easter reunions.

This is the recipe I use (it’s not mine, my grandma pass it to me)

Flour mixture:

3 cups all purpose flour

1/4 teaspoons salt

3/4 teaspoon baking soda

2 teaspoons ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon ground cloves

Whisk together and set aside.

Butter-molasses mixture:

1/2 cup unsalted butter, room temperature

1/2 cup brown sugar

1 large egg

2/3 cup dark molasses
Cream the butter and sugar until light and fluffy. Add the egg and molasses and beat until well combined.

Gradually add the flour mixture beating until incorporated.

wrap the dough in plastic wrap and refrigerate for at least 1 and a half hours. 

Before rolling out the dough preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven.

Spread a baking sheet with butter and set aside while you roll out the dough.

Roll out the dough on a lightly floured surface to a thickness of about 1/4 inch.

Use a shaped cutter to cut out the cookies, or make them squared as I do!

Place the cookies very carefully onto the baking sheet with an offset spatula. Leave about 1 inch of space between cookies.

Bake for about 8 - 12 minutes depending on the size of the cookies. They are done when they are firm and the edges are just beginning to brown. 

Don’t remove the cookies from the baking sheet immediately! Wait for about 2 minutes till they are firm enough to transfer to a wire rack to cool completely.
